Ginger Tea for Colds and Flu

At the first onset of cold and flu, I love to enjoy a steaming mug of ginger tea. Here is a great recipe adapted from Stephen Buhner. You will want to make a generous amount of the ginger juice so you have enough to last for a few days. Enjoy!

For one mug of tea:

1-2 Tablespoons fresh ginger juice

1/8 tsp cayenne

1-3 tsp honey

juice of 1/4 lemon or lime

6-8 oz of hot water

Juice about half a pound of fresh ginger root (dry ginger does not work for this recipe). Half a pound of ginger root yields about 12 Tablespoons of ginger juice. Use 1-2 Tablespoons of ginger juice per mug of tea. Drink 2-6 mugs of tea per day. Store the remainder of the juice in the fridge. If you don't use it all up in a couple of days, store any remaining ginger in the freezer. Ginger juice works well in recipes calling for fresh ginger. A one inch piece of ginger yields about 1 Tablespoon of ginger juice.

If you don't have a juicer, grate or finely chop a piece of fresh ginger root, about the size of your thumb. Steep in 8-12 oz of hot water for 2-3 hours covered. Strain and add the remaining ingredients as above. Drink 2-6 cups per day.
